Coffee And Social ResponsibilityThe Don Tomas family farms uphold commitments to our community. At any given day some 300 workers and their families live at our farms and during the peak harvest season there could be over 3000 workers harvesting accompanied by their families. Portions of the revenues from the sales of Don Tomas coffee directly support housing, nutrition programs, medical clinics and schools to care for our workers and their families.
Coffee Supports Education for Children of the Farm CommunityDon Tomas farms also operate a pre-school to 12th grade, the Flor de María Technical School to educate farm and community children in mathematics, the sciences, literature and English. It is our hope that these girls and boys can one day find brighter futures outside the farm community and ultimately lift their families out of life long poverty through quality education.
Canopies of Shade TreesShaded coffee by canopies of trees not only improves the ripening of coffee cherries to make a better cup of coffee, but there are many ecological benefits as well. The canopy of shade trees provides habitat for many birds and animals that live in the upper part of our cloud forest. The falling leaves from the nitrogen fixing shade trees we plant fortify and return nutrients to our soil. The roots of these trees also strengthen our land and prevent erosion during heavy rains along steep mountain slopes where coffee often grows.
Reusing the Honey WaterCoffee processing uses a lot of water, and quite often the sweetened honey water is released without treatment and contaminates rivers, creeks and lakes. At Don Tomas farms, we reuse and recycle this honey water during the coffee washing process. The benefits of reusing the honey water isn't only ecological, it's actually better for the coffee. Excessive washing of coffee with water leeches out nutrients from the coffee beans, but reusing the honey water allows our coffee bean to retain the sugars, proteins and acids that make a good cup of coffee brighter. After the washing, the honey water is piped to fertilize pastures growing sorghum grain. Sorghum is a high protein fodder we use to feed dairy cows and cattle located at another part of the Don Tomas farms.
Single Serve Coffee Without the Waste
Coffee your way, one serving at a time. Pour over coffee is a great way to start your day. It's simple, quick, ecological and 100% compost friendly.
Begin with a pour over cone and a properly sized filter. Add 14 grams of coffee grounds to the filter cone. With a goose neck kettle, slowly pour 240 ml of hot water at 96°C over the coffee. Adjust your coffee grounds/water up or down to suite your taste. Quick, simple and elegant!
We Love Trees. Our Coffee Loves the Shade
Umbrella shaped trees form the canopy over our coffee. Shading of coffee slows down the ripening of coffee, giving coffee cherries more time to sweeten and mature.
We plant nitrogen fixating shade trees. These type of trees convert atmospheric nitrogen into nitrates. Nitrate is a fertilizer that is then utilized by coffee trees. This is what we mean by sustainable farming when we establish and implement the nitrogen cycle by planting the right type of shade trees.
Our shade trees grow rapidly and the branches need to be regulated and pruned periodically. The pruning produces 'leña' meaning fire wood which workers and farmers can use in the kitchen for cooking and for heating.
Quality Starts with Selectivity
The coffee of each day's harvest is cupped and scored. Over 85% of our coffee (some one million pounds yearly) is exported as specialty grade coffee all over the world. The best of the one million pounds of coffee is brought to the Central Valley of California and roasted under Don Tomas Coffee Company.
We define our best coffee for roasting based on criteria of fragrance, sweetness, brightness in acidity, great body and a pleasant after taste. Depending on the roast our coffee can be bright and fruity, or chocholatey and smooth, or even smokey and rich.
With each harvest we will introduce new coffee varietals with their own unique tastes such as Maragogipe, Pacamara, NicaJava and even Geisha.
